Tex-Mex Main Dish
Use the Dry Tex-Mex Rice Mix to make a main dish adding the additional ingredients.
YIELDS: Approx. 7 to 8 cups (1,588g to 1,814g)
INGREDIENTS
11â4 cups (283g) Dry Master Tex-Mex Rice Mix (homemade)
2 cups (480ml) water or broth
1 to 2 teaspoons (5g to 10ml) butter or olive oil
15 ounces (425g) canned pinto beans, rinsed and drained
1â2 cup (115g) sour cream
1 cup (113g) Monterrey Jack cheese.
In a large saucepan, add the rice mix with water or broth. Add butter or olive oil. Bring to a boil over high heat. Immediately cover and reduce heat to low or warm. Simmer for 10 to 12 minutes or until all the liquid is absorbed. Add canned beans and sour cream. Top with shredded cheese and microwave until the cheese is melted. Stir and enjoy!
